  • roasted fig with cheese foam & crispy ham
  • escabeched mackerel, idiazabal cheese & pine nuts mousse, veil of basil gelatine
  • seared tuna  with ajo blanco
  • pan fried fresh cod pil-pil with garlic, touch of chilli & olive oil emulsion
  • black risotto with squid & black ali oli
  • braised oxtail, pumpkin & ginger purée, rosemary air, red wine & cola jus.
  • serrano ham croquettes.
  • wood pigeon, fig puree & red wine jus.
  •  olive oil brownie with pistachio, vanilla & coffee foam

  • marinated anchovies, olive oil, garlic, lemon & paersley
  • escabeched mackerel, idiazabal cheese & pine nuts mousse, veil of basil gelatine
  • cod vizcaina, tomatoes & choricero chillies
  • pan fried fresh cod pil-pil with garlic, touch of chilli & olive oil emulsion
  • poached egg, caramelized onions & cream of potatoes foam
  • spanish omelette
  • braised oxtail, pumpkin & ginger purée, rosemary air, red wine & cola jus.
  • stew of oxtail, red wine & cream of potatoes
  • pear cooked in red wine
  • fruit salad impregnated in mint, vanilla, chocolate & yoghurt foam
